One dish that never fails to satisfy both your taste buds and your morning hunger pangs is the Sweet Potato Breakfast Hash. As you prepare to embark on a day full of adventures, meetings, or simply tackling your to-do list, this dish will provide you with the perfect blend of flavors and nutrients to kickstart your morning.

Ingredients

  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 cups fresh spinach leaves
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1-2 ripe avocados, sliced
  • Hot sauce (optional, for drizzling)
  • 2 eggs

Instructions

  1. Prepare your vegetables. Peel and dice the sweet potatoes into 1⁄2-inch cubes, dice the red bell pepper, yellow onion and set aside together in a large bowl. Rinse the spinach leaves and slice the avocados.
  2. Add 2 tablespoons of olive oil into a large skillet over medium-high heat. Add the diced sweet potato, red bell pepper and yellow onion mixture. Saute for 12-15 minutes, until tender and golden. Stir occasionally. 
  3. Sprinkle 1 teaspoon of paprika, ¼ teaspoon black pepper over the mixture. Stir well to evenly coat. Taste and adjust seasoning if needed.
  4. Lower the heat to medium and gently fold in 2 cups of fresh spinach leaves. Continue to stir until the spinach wilts, about 2-3 minutes.
  5. In a separate pan, cook your eggs according to your preferred style. (sun-side-up, over-easy, poached, scrambled).
  6. Plate your sweet potato hash. Divide the sweet potato hash between 2 plates. Once your egg is finished cooking, place on top of each serving.
  7. Add sliced avocado to the side and drizzle some hot sauce if preferred.
