- 1/4 cup chia seeds
- 1 cup unsweetened soy milk (or your preferred plant-based milk)
- 1 apple, diced (we love using Honeycrisp or Granny Smith)
- 1/2 teaspoon ground cinnamon
- 1 tablespoon maple syrup (adjust to your preferred sweetness)
- Optional toppings: Sliced apples, chopped nuts, and a sprinkle of cinnamon
Instructions
- In a mixing bowl, combine 1/4 cup of chia seeds and 1 cup of unsweetened soy milk. Stir well to evenly distribute the chia seeds. Make sure to stir again after a few minutes to prevent clumping.
- Dice 1 apple into small pieces and add it to the chia mixture.
- Mix in ½ teaspoon of the ground cinnamon.
- Drizzle 1 tablespoon of maple syrup into the mixture, adjusting the amount to your desired level of sweetness. Stir until all the ingredients are combined.
- Divide the chia apple mixture evenly between 2 jars or containers with lids. Allow the pudding to set overnight or for a minimum for 4-6 hours. This gives the chia seeds time to absorb the liquid and create a pudding-like consistency.
- Once your pudding is fully set, give it a good stir to fluff it up. Adjust the thickness by adding more soy milk if needed.
