Ingredients:

  • 1 lb. pasta of your choice

  • 1 container of Trader Joe’s Garden Vegetable Hash

  • 8 grilled artichokes, sliced

  • 1 can of Trader Joe’s Greek Chickpeas Parsley & Cumin

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 tablespoons olive oil

  • 1 lemon, juiced

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.

  2. In a large bowl, mix together the cooked pasta, garden vegetable hash, sliced grilled artichokes, Greek chickpeas, and chopped sun-dried tomatoes.

  3. In a small bowl, whisk together the olive oil, and lemon juice. Pour the dressing over the pasta mixture and toss until well combined.

  4. Serve the pasta salad cold. Enjoy!

Tip: you can swap out olive oil and lemon juice for 1 tablespoon of balsamic vinegar. If you’re looking for more protein, you can add your favorite plant protein or animal protein.
