Ingredients:

1 lb. pasta of your choice

1 container of Trader Joe’s Garden Vegetable Hash

8 grilled artichokes, sliced

1 can of Trader Joe’s Greek Chickpeas Parsley & Cumin

1/2 cup sun-dried tomatoes, chopped

1 tablespoons olive oil

1 lemon, juiced
Instructions:

Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.

In a large bowl, mix together the cooked pasta, garden vegetable hash, sliced grilled artichokes, Greek chickpeas, and chopped sun-dried tomatoes.

In a small bowl, whisk together the olive oil, and lemon juice. Pour the dressing over the pasta mixture and toss until well combined.

Serve the pasta salad cold. Enjoy!
Tip: you can swap out olive oil and lemon juice for 1 tablespoon of balsamic vinegar. If you’re looking for more protein, you can add your favorite plant protein or animal protein.
