Ingredients:
- 3 ripe bananas
- 1/3 cup vegetable oil of your choice
- 1/2 cup maple syrup

- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon

Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan and set it aside.
- In a small bowl, mix together the chia seeds and water. Set aside for 5-10 minutes until it forms a gel-like consistency.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the vegetable oil, maple syrup, chia eggs, and vanilla extract to the mashed bananas. Mix well.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Be careful not to overmix.
- If desired, fold in the chopped nuts or dairy-free chocolate chips.
- Pour the batter into the greased loaf pan, spreading it evenly.
- Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean.
