Ingredients
- 2 ripe bananas, peeled and frozen
- 2 cups fresh spinach leaves
- 2 tablespoons almond butter
- 1 cup unsweetened soy milk (adjust for desired consistency, or your preferred plant-based milk)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon vanilla extract
- Toppings: Sliced fresh figs, pomegranate seeds, crushed pecans
Instructions
- In a blender combine frozen bananas, fresh spinach, almond butter, soy milk (or your preferred plant-based milk), ground cinnamon, ground nutmeg, ground ginger and vanilla extract.
- Blend until the mixture is smooth and creamy. If needed, add more soy milk to achieve your preferred consistency.
- If using toppings, slice the figs, crush pecans, and extract the pomegranate seeds if needed.
