This delightful, dairy-free breakfast option captures the essence of autumn in every bite. Packed with wholesome ingredients and vibrant colors, this smoothie bowl is a nutritious and visually stunning way to start your day.

Ingredients

  • 2 ripe bananas, peeled and frozen
  • 2 cups fresh spinach leaves
  • 2 tablespoons almond butter
  • 1 cup unsweetened soy milk (adjust for desired consistency, or your preferred plant-based milk)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon vanilla extract
  • Toppings: Sliced fresh figs, pomegranate seeds, crushed pecans

Instructions

  1. In a blender combine frozen bananas, fresh spinach, almond butter, soy milk (or your preferred plant-based milk), ground cinnamon, ground nutmeg, ground ginger and vanilla extract.
  2. Blend until the mixture is smooth and creamy. If needed, add more soy milk to achieve your preferred consistency. 
  3. If using toppings, slice the figs, crush pecans, and extract the pomegranate seeds if needed.
  4. Pour smoothie mixture into a bowl and top with your favorite toppings. 
  5. Enjoy!
