Ingredients:
- 1 cup of white rice, cooked according to package instructions
- 1 cup of salsa
- 1 can (15 oz) of corn, rinsed and drained
- 1 can (15 oz) of black beans, rinsed and drained
- 1 can (15 oz) of refried beans
- 1 cup of mixed frozen bell peppers, microwaved according to package instructions
- 2 cups of romaine or iceberg lettuce, chopped
- 8 corn tortillas, microwaved according to package instructions
Instructions:
- In a large microwave-safe bowl, combine the cooked white rice, salsa, canned corn, and canned black beans.
- Microwave the rice and bean mixture for 2-3 minutes, or until heated through.
- Microwave the canned refried beans in a separate microwave-safe bowl for 1-2 minutes, or until heated through.
- To assemble the soft tacos, place a spoonful of refried beans on the center of each corn tortilla.
- Spoon the rice and bean mixture over the refried beans, followed by a layer of chopped lettuce and mixed bell peppers.
- Fold the tortillas in half to enclose the filling, and serve immediately.
