Ingredients:

  • 1 cup of white rice, cooked according to package instructions
  • 1 cup of salsa
  • 1 can (15 oz) of corn, rinsed and drained
  • 1 can (15 oz) of black beans, rinsed and drained
  • 1 can (15 oz) of refried beans
  • 1 cup of mixed frozen bell peppers, microwaved according to package instructions
  • 2 cups of romaine or iceberg lettuce, chopped
  • 8 corn tortillas, microwaved according to package instructions

Instructions:

  1. In a large microwave-safe bowl, combine the cooked white rice, salsa, canned corn, and canned black beans.
  2. Microwave the rice and bean mixture for 2-3 minutes, or until heated through.
  3. Microwave the canned refried beans in a separate microwave-safe bowl for 1-2 minutes, or until heated through.
  4. To assemble the soft tacos, place a spoonful of refried beans on the center of each corn tortilla.
  5. Spoon the rice and bean mixture over the refried beans, followed by a layer of chopped lettuce and mixed bell peppers.
  6. Fold the tortillas in half to enclose the filling, and serve immediately.
